Who doesn’t love dessert? That secret fill-up at the end of a meal is so delicious and rewarding that even the most health-conscious among us find it hard to give up. Now you won’t have to. Participants at this program will learn how to prepare "sinful" treats with a light touch. They’ll learn how to reduce the fat and sugar content in a recipe and still be able to produce moist and tender cakes, baked fruit crepes, and creamy frozen confections.

Though Mexican food is the most popular of ethnic cuisines in he United States, it is a cuisine often embellished with sour cream, high fat cheeses, and a great amount of lard and oil used in preparations. Attendees to this program will be shown how to emphasize the positive elements of Latin cuisine—beans, rice, tortillas, and the indigenous vegetables, while banishing the fats from the traditional foods.
